The main reason I've been spending so much at the store has been because lately I've been making almost all of my meals at home. I used to eat at the cafeteria at work almost every day, and eat out or eat some kind of frozen meal the rest of the time. This month I haven't been to the cafeteria once. Nice! But the grocery bill is still pretty shameful. I'm going to make it a goal for February to come up with more budget-friendly meals to make ahead.
Today I made the usual breakfast casserole. This one comes in at under 300 calories for 1/8 of what you see here. The first picture is just because I thought the onions and peppers looked pretty.
I wanted to make a cheap-ish lunch meal to bring to work, and since I have a ton of brown rice, broccoli, and spinach, I made tofu, brown rice and vegetables (I added zucchini and mushrooms) with a sauce on the side made of ginger, soy sauce, the juice from the mushrooms and garlic, and sesame oil. I had one for dinner, and I have four to freeze. I used half a cup of rice per portion, and bulked up on the veggies. The sauce had almost as many calories as the rice did, but it tastes super yummy.
